Ingredients

  • 1¼ lb ground turkey
  • 4 cup broccoli florets
  • 2 carrots
  • 1 red bell pepper
  • ½ yellow onion
  • 3 clove garlic
  • 1 tbsp fresh ginger
  • ⅓ cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp vegetable oil
  • ½ tsp red pepper flakes (optional)
  • 4 cup cooked rice (optional)
  • 1 tsp sesame seeds (optional)

Steps

  1. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, cornstarch, and water to create the stir-fry sauce. Set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add ground turkey and cook, breaking it apart, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  3. Add chopped onion, minced garlic, grated ginger, and red pepper flakes (if using) to the skillet. Sauté for 2-3 minutes until fragrant.
  4. Stir in broccoli florets, sliced carrots, and diced red bell pepper. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp.
  5. Pour the prepared stir-fry sauce over the turkey and vegetables. Bring to a simmer and cook for 1-2 minutes, stirring constantly, until the sauce thickens.
  6. Serve immediately over cooked rice, if desired, and garnish with sesame seeds.
