Ground Turkey Stir-fry
A quick and healthy stir-fry featuring lean ground turkey and a colorful array of vegetables in a savory sauce.
Ingredients
- 1¼ lb ground turkey
- 4 cup broccoli florets
- 2 carrots
- 1 red bell pepper
- ½ yellow onion
- 3 clove garlic
- 1 tbsp fresh ginger
- ⅓ cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp cornstarch
- 2 tbsp water
- 1 tbsp vegetable oil
- ½ tsp red pepper flakes (optional)
- 4 cup cooked rice (optional)
- 1 tsp sesame seeds (optional)
Steps
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, cornstarch, and water to create the stir-fry sauce. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add ground turkey and cook, breaking it apart, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
- Add chopped onion, minced garlic, grated ginger, and red pepper flakes (if using) to the skillet. Sauté for 2-3 minutes until fragrant.
- Stir in broccoli florets, sliced carrots, and diced red bell pepper. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp.
- Pour the prepared stir-fry sauce over the turkey and vegetables. Bring to a simmer and cook for 1-2 minutes, stirring constantly, until the sauce thickens.
- Serve immediately over cooked rice, if desired, and garnish with sesame seeds.
