Ingredients

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1 medium onion
  • 2 cloves garlic
  • 2 tbsp taco seasoning
  • 14½ oz diced tomatoes
  • 15 oz black beans
  • 1 cup corn
  • ½ cup chicken broth
  • ½ cup cheddar cheese (optional)
  • ¼ cup cilantro (optional)
  • ½ lime (optional)

Steps

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it apart, until browned.
  2. Drain any excess fat. Add chopped onion and minced garlic to the skillet and cook until softened, about 3-5 minutes.
  3. Stir in taco seasoning, diced tomatoes (undrained), rinsed black beans, corn, and chicken broth. Bring to a simmer.
  4. Reduce heat to medium-low, cover, and cook for 10-15 minutes, or until heated through and slightly thickened.
  5. If desired, sprinkle with shredded cheddar cheese, cover, and cook until melted.
  6. Garnish with fresh cilantro and a squeeze of lime juice, if using. Serve hot.
