Halloumi Burgers

Salty, squeaky halloumi cheese is grilled to perfection and served in a bun with fresh veggies for a satisfying vegetarian burger.

Ingredients

  • 16 oz halloumi cheese
  • 4 burger buns
  • 2 tomato
  • ½ red onion
  • 4 lettuce leaves
  • 2 tbsp olive oil
  • ¼ cup mayonnaise (optional)
  • ¼ cup ketchup (optional)

Steps

  1. Slice the halloumi cheese into 8 equal slabs, about 1/2 inch thick.
  2. Heat a grill pan or outdoor grill to medium-high heat. Brush the halloumi slices lightly with olive oil.
  3. Grill the halloumi for 2-3 minutes per side, until golden brown with grill marks. Toast the burger buns lightly on the grill during the last minute.
  4. Slice the tomatoes and red onion. Wash and dry the lettuce leaves.
  5. Assemble the burgers: spread mayonnaise or ketchup on the buns if desired, then layer with grilled halloumi, lettuce, tomato, and red onion.
  6. Serve immediately.
