Halloumi Burgers
Salty, squeaky halloumi cheese is grilled to perfection and served in a bun with fresh veggies for a satisfying vegetarian burger.
Ingredients
- 16 oz halloumi cheese
- 4 burger buns
- 2 tomato
- ½ red onion
- 4 lettuce leaves
- 2 tbsp olive oil
- ¼ cup mayonnaise (optional)
- ¼ cup ketchup (optional)
Steps
- Slice the halloumi cheese into 8 equal slabs, about 1/2 inch thick.
- Heat a grill pan or outdoor grill to medium-high heat. Brush the halloumi slices lightly with olive oil.
- Grill the halloumi for 2-3 minutes per side, until golden brown with grill marks. Toast the burger buns lightly on the grill during the last minute.
- Slice the tomatoes and red onion. Wash and dry the lettuce leaves.
- Assemble the burgers: spread mayonnaise or ketchup on the buns if desired, then layer with grilled halloumi, lettuce, tomato, and red onion.
- Serve immediately.
