Hearty Fish Stew

Ingredients

  • 1½ lb cod fillets
  • 2 tbsp olive oil
  • 1 medium yellow onion
  • 3 clove garlic
  • 2 medium carrots
  • 2 celery stalks
  • 28 oz diced tomatoes
  • 4 cup fish broth
  • ½ cup dry white wine (optional)
  • 1 bay leaf
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup fresh parsley (optional)

Steps

  1. Pat fish fillets dry and cut into 1-2 inch pieces. Season lightly with salt and pepper.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion, carrots, and celery and cook until softened, about 5-7 minutes.
  3. Stir in minced garlic, bay leaf, and dried thyme, cooking for 1 minute until fragrant.
  4. Pour in diced tomatoes (undrained), fish broth, and white wine (if using). Bring the mixture to a simmer, then reduce heat, cover, and cook for 15 minutes to allow flavors to meld.
  5. Gently add the fish pieces to the simmering stew. Cover and cook for another 5-8 minutes, or until the fish is opaque and flakes easily with a fork.
  6. Remove the bay leaf. Taste and adjust seasoning with salt and pepper as needed.
  7. Ladle the stew into bowls and garnish with fresh parsley, if desired.
