Hearty Fish Stew
A comforting and flavorful fish stew, brimming with tender white fish, vegetables, and a rich tomato-based broth.
Ingredients
- 1½ lb cod fillets
- 2 tbsp olive oil
- 1 medium yellow onion
- 3 clove garlic
- 2 medium carrots
- 2 celery stalks
- 28 oz diced tomatoes
- 4 cup fish broth
- ½ cup dry white wine (optional)
- 1 bay leaf
- 1 tsp dried thyme
- ½ tsp salt
- ¼ tsp black pepper
- ¼ cup fresh parsley (optional)
Steps
- Pat fish fillets dry and cut into 1-2 inch pieces. Season lightly with salt and pepper.
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion, carrots, and celery and cook until softened, about 5-7 minutes.
- Stir in minced garlic, bay leaf, and dried thyme, cooking for 1 minute until fragrant.
- Pour in diced tomatoes (undrained), fish broth, and white wine (if using). Bring the mixture to a simmer, then reduce heat, cover, and cook for 15 minutes to allow flavors to meld.
- Gently add the fish pieces to the simmering stew. Cover and cook for another 5-8 minutes, or until the fish is opaque and flakes easily with a fork.
- Remove the bay leaf. Taste and adjust seasoning with salt and pepper as needed.
- Ladle the stew into bowls and garnish with fresh parsley, if desired.
