Hot and Sour Soup
A classic Chinese soup featuring a delightful balance of spicy, sour, and savory flavors with tender pork, tofu, and mushrooms.
Ingredients
- ½ cup pork
- 2½ cup chicken broth
- ⅔ cup firm tofu
- ⅓ cup button mushrooms
- ⅓ cup wood ear mushrooms
- ½ tsp salt
- ¼ tsp sugar
- 1 tsp sesame oil
- ¼ tsp white pepper
- ½ tsp hot sauce
- 1½ cup rice vinegar
- 1 tsp soy sauce
- 1 tbs cornstarch
- 2 tbs water
- 1 egg
- ¼ cup green onions (optional)
Steps
- In a large pot or wok, bring chicken broth to a boil.
- Add salt, sugar, sesame oil, white pepper, hot sauce, vinegar, and soy sauce to the broth and stir well.
- Stir in the tofu, button mushrooms, and wood ear mushrooms.
- In a small bowl, whisk together cornstarch and water to create a slurry. Slowly add the slurry to the boiling soup, stirring constantly until it reaches your desired thickness.
- Lightly beat the egg and slowly drizzle it into the soup while stirring gently for about 8 seconds, creating ribbons of egg.
- Ladle the hot soup into bowls and top with cooked pork and sliced green onions, if using. Serve immediately.
