Hot and Sour Soup

Ingredients

  • ½ cup pork
  • 2½ cup chicken broth
  • ⅔ cup firm tofu
  • ⅓ cup button mushrooms
  • ⅓ cup wood ear mushrooms
  • ½ tsp salt
  • ¼ tsp sugar
  • 1 tsp sesame oil
  • ¼ tsp white pepper
  • ½ tsp hot sauce
  • 1½ cup rice vinegar
  • 1 tsp soy sauce
  • 1 tbs cornstarch
  • 2 tbs water
  • 1 egg
  • ¼ cup green onions (optional)

Steps

  1. In a large pot or wok, bring chicken broth to a boil.
  2. Add salt, sugar, sesame oil, white pepper, hot sauce, vinegar, and soy sauce to the broth and stir well.
  3. Stir in the tofu, button mushrooms, and wood ear mushrooms.
  4. In a small bowl, whisk together cornstarch and water to create a slurry. Slowly add the slurry to the boiling soup, stirring constantly until it reaches your desired thickness.
  5. Lightly beat the egg and slowly drizzle it into the soup while stirring gently for about 8 seconds, creating ribbons of egg.
  6. Ladle the hot soup into bowls and top with cooked pork and sliced green onions, if using. Serve immediately.
