Hummus and Veggie Wraps
Quick and healthy, these wraps are packed with creamy hummus and crisp fresh vegetables, perfect for a light lunch or dinner.
Ingredients
- 4 large flour tortillas
- 1 cup hummus
- ½ cucumber
- 2 carrots
- 1 bell pepper
- 2 cups spinach
- ¼ red onion (optional)
- ¼ cup feta cheese (optional)
Steps
- Slice the cucumber and bell pepper into thin strips. Shred or finely julienne the carrots. Thinly slice the red onion, if using.
- Lay out each tortilla on a clean surface.
- Spread about 1/4 cup of hummus evenly over each tortilla, leaving a small border.
- Arrange the spinach, cucumber, carrots, bell pepper, and red onion (if using) down the center of each tortilla.
- Sprinkle with feta cheese, if desired.
- Fold in the sides of each tortilla, then tightly roll it up from the bottom to create a wrap. Serve immediately.
