Hummus and Veggie Wraps

Quick and healthy, these wraps are packed with creamy hummus and crisp fresh vegetables, perfect for a light lunch or dinner.

Ingredients

  • 4 large flour tortillas
  • 1 cup hummus
  • ½ cucumber
  • 2 carrots
  • 1 bell pepper
  • 2 cups spinach
  • ¼ red onion (optional)
  • ¼ cup feta cheese (optional)

Steps

  1. Slice the cucumber and bell pepper into thin strips. Shred or finely julienne the carrots. Thinly slice the red onion, if using.
  2. Lay out each tortilla on a clean surface.
  3. Spread about 1/4 cup of hummus evenly over each tortilla, leaving a small border.
  4. Arrange the spinach, cucumber, carrots, bell pepper, and red onion (if using) down the center of each tortilla.
  5. Sprinkle with feta cheese, if desired.
  6. Fold in the sides of each tortilla, then tightly roll it up from the bottom to create a wrap. Serve immediately.
