Ingredients

  • 30 oz canned chickpeas
  • ½ cup tahini
  • 4 tbsp lemon juice
  • 2 clove garlic
  • 4 tbsp olive oil
  • ¼ cup water
  • ½ tsp salt
  • 12 oz pre-made falafel
  • 1 cucumber
  • 1 pint cherry tomatoes
  • ½ red onion
  • ¼ cup fresh parsley
  • 4 pita bread (optional)

Steps

  1. Drain and rinse chickpeas. In a food processor, combine chickpeas, 1/4 cup tahini, 2 tbsp lemon juice, 2 cloves garlic, 2 tbsp olive oil, and 1/4 cup water. Blend until smooth, adding more water if needed for desired consistency. Season with salt.
  2. Prepare the falafel according to package instructions (bake or pan-fry).
  3. Dice the cucumber, halve the cherry tomatoes, and thinly slice the red onion.
  4. Prepare the tahini dressing: Whisk together the remaining 1/4 cup tahini, 2 tbsp lemon juice, 2 tbsp olive oil, and 2-4 tablespoons of water until smooth and pourable. Season with a pinch of salt.
  5. Divide the hummus among four bowls. Top with cooked falafel, diced cucumber, cherry tomatoes, and sliced red onion.
  6. Drizzle generously with the tahini dressing and garnish with fresh parsley. Serve with warm pita bread, if desired.
