Hummus Bowls with Falafel

Ingredients
- 30 oz canned chickpeas
- ½ cup tahini
- 4 tbsp lemon juice
- 2 clove garlic
- 4 tbsp olive oil
- ¼ cup water
- ½ tsp salt
- 12 oz pre-made falafel
- 1 cucumber
- 1 pint cherry tomatoes
- ½ red onion
- ¼ cup fresh parsley
- 4 pita bread (optional)
Steps
- Drain and rinse chickpeas. In a food processor, combine chickpeas, 1/4 cup tahini, 2 tbsp lemon juice, 2 cloves garlic, 2 tbsp olive oil, and 1/4 cup water. Blend until smooth, adding more water if needed for desired consistency. Season with salt.
- Prepare the falafel according to package instructions (bake or pan-fry).
- Dice the cucumber, halve the cherry tomatoes, and thinly slice the red onion.
- Prepare the tahini dressing: Whisk together the remaining 1/4 cup tahini, 2 tbsp lemon juice, 2 tbsp olive oil, and 2-4 tablespoons of water until smooth and pourable. Season with a pinch of salt.
- Divide the hummus among four bowls. Top with cooked falafel, diced cucumber, cherry tomatoes, and sliced red onion.
- Drizzle generously with the tahini dressing and garnish with fresh parsley. Serve with warm pita bread, if desired.
