Jamaican Corned Beef and Cabbage

Ingredients

  • 1 tbsp olive oil
  • 1 head cabbage
  • 1 green bell pepper
  • 1 onion
  • 2 cloves garlic
  • 12 oz canned corned beef
  • 2 plum tomatoes
  • 2 sprigs fresh thyme
  • 1 tbsp tomato ketchup
  • ½ tsp salt (optional)
  • ¼ tsp black pepper (optional)
  • ½ tsp scotch bonnet pepper sauce (optional)

Steps

  1. Heat olive oil in a large skillet or Dutch pot over medium-high heat.
  2. Add chopped onion and green bell pepper and sauté for 3-5 minutes until softened.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Add shredded cabbage and stir, cooking for 3-5 minutes until it begins to soften.
  5. Add corned beef, chopped plum tomatoes, fresh thyme, and tomato ketchup. Stir well.
  6. If desired, add scotch bonnet pepper sauce for a touch of heat. Reduce heat to medium and cook for 3-5 minutes, or until the corned beef is heated through.
  7. Season with salt and pepper to taste, then remove from heat and serve immediately.
