Jamaican Corned Beef and Cabbage

Ingredients
- 1 tbsp olive oil
- 1 head cabbage
- 1 green bell pepper
- 1 onion
- 2 cloves garlic
- 12 oz canned corned beef
- 2 plum tomatoes
- 2 sprigs fresh thyme
- 1 tbsp tomato ketchup
- ½ tsp salt (optional)
- ¼ tsp black pepper (optional)
- ½ tsp scotch bonnet pepper sauce (optional)
Steps
- Heat olive oil in a large skillet or Dutch pot over medium-high heat.
- Add chopped onion and green bell pepper and sauté for 3-5 minutes until softened.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add shredded cabbage and stir, cooking for 3-5 minutes until it begins to soften.
- Add corned beef, chopped plum tomatoes, fresh thyme, and tomato ketchup. Stir well.
- If desired, add scotch bonnet pepper sauce for a touch of heat. Reduce heat to medium and cook for 3-5 minutes, or until the corned beef is heated through.
- Season with salt and pepper to taste, then remove from heat and serve immediately.
