Ingredients

  • 1 lb Jumbo Shrimp
  • 2½ tbsp Jamaican Curry Powder
  • 1 tsp All-purpose Seasoning
  • 2 tbsp Olive Oil
  • 1 Yellow Onion
  • 1 Red Bell Pepper
  • 1 Green Bell Pepper
  • 1 Scotch Bonnet Pepper (optional)
  • 3 clove Garlic
  • 380 g Unsweetened Coconut Milk
  • ½ tbsp Tomato Ketchup
  • 4 sprig Fresh Thyme
  • 1 pinch Salt (optional)
  • 1 pinch Black Pepper (optional)

Steps

  1. Season shrimp with 1 tablespoon of curry powder and all-purpose seasoning; set aside for 10 minutes.
  2. Heat olive oil in a large skillet over medium heat. Add sliced onion, red bell pepper, green bell pepper, scotch bonnet (if using), and chopped garlic.
  3. Sauté vegetables for 5 minutes until slightly softened, then stir in the remaining 1.5 tablespoons of curry powder and cook for 1 minute more.
  4. Add coconut milk, seasoned shrimp, ketchup, and thyme sprigs to the skillet, ensuring shrimp is covered in sauce.
  5. Bring the sauce to a simmer and cook over medium heat for 5-6 minutes, stirring occasionally and flipping shrimp halfway, until shrimp is fully cooked.
  6. Taste and season with salt and pepper as needed before serving.
