Jamaican Curry Shrimp

Ingredients
- 1 lb Jumbo Shrimp
- 2½ tbsp Jamaican Curry Powder
- 1 tsp All-purpose Seasoning
- 2 tbsp Olive Oil
- 1 Yellow Onion
- 1 Red Bell Pepper
- 1 Green Bell Pepper
- 1 Scotch Bonnet Pepper (optional)
- 3 clove Garlic
- 380 g Unsweetened Coconut Milk
- ½ tbsp Tomato Ketchup
- 4 sprig Fresh Thyme
- 1 pinch Salt (optional)
- 1 pinch Black Pepper (optional)
Steps
- Season shrimp with 1 tablespoon of curry powder and all-purpose seasoning; set aside for 10 minutes.
- Heat olive oil in a large skillet over medium heat. Add sliced onion, red bell pepper, green bell pepper, scotch bonnet (if using), and chopped garlic.
- Sauté vegetables for 5 minutes until slightly softened, then stir in the remaining 1.5 tablespoons of curry powder and cook for 1 minute more.
- Add coconut milk, seasoned shrimp, ketchup, and thyme sprigs to the skillet, ensuring shrimp is covered in sauce.
- Bring the sauce to a simmer and cook over medium heat for 5-6 minutes, stirring occasionally and flipping shrimp halfway, until shrimp is fully cooked.
- Taste and season with salt and pepper as needed before serving.
