Jamaican Festival (Sweet Dumpling)

Lightly sweet and crispy on the outside, soft on the inside, these Jamaican festival dumplings are the perfect accompaniment to any Caribbean meal.

Ingredients

  • 1½ cup all-purpose flour
  • ½ cup cornmeal
  • 6 tbsp granulated sugar
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • ½ tsp salt
  • ¾ cup milk
  • 3 cup vegetable oil

Steps

  1. In a large bowl, combine flour, cornmeal, sugar, baking powder, and salt.
  2. Add vanilla extract and milk to the dry ingredients, stirring until a dough forms. Lightly knead into a ball.
  3. Pinch off pieces of dough and roll them into approximately 12 oval shapes.
  4. Heat about 3 inches of oil in a heavy-bottomed pot over medium heat to 350°F (175°C).
  5. Carefully fry the dumplings in batches for 4-6 minutes, turning occasionally, until golden brown on all sides.
  6. Remove the fried dumplings and drain on paper towels to remove excess oil.
  7. Serve warm as a sweet side dish.
