Jamaican Instant Pot Rice and Beans
A flavorful and comforting one-pot Jamaican rice and beans dish, cooked to perfection in an Instant Pot with aromatic spices and creamy coconut milk.
Ingredients
- 1 tbsp olive oil
- 1 yellow onion
- 1 clove garlic
- 2 green onions
- 2 cup long-grain rice
- ¾ cup coconut milk
- ¾ cup water
- 1½ tsp salt
- ½ tsp allspice
- ¼ tsp black pepper
- 450 g canned kidney beans
- 2 fresh thyme sprigs
Steps
- Set the Instant Pot to 'Sauté' mode. Once hot, add olive oil, then yellow onion and cook for 3 minutes until softened.
- Add garlic and green onions, stirring for 30 seconds more. Press 'Cancel' on the Instant Pot.
- Stir in rice, coconut milk, water, salt, allspice, and black pepper.
- Pour undrained kidney beans on top of the rice mixture (do not stir). Lay thyme sprigs on top.
- Cover the Instant Pot, set the valve to 'Sealing', and pressure cook on High for 6 minutes.
- Allow a natural release for 10 minutes, then quick release any remaining pressure.
- Open the lid, remove thyme sprigs, and fluff the rice with a fork before serving.
