Ingredients

  • 1 lb shrimp
  • 2 Scotch Bonnet peppers
  • 1 tbsp all-purpose seasoning
  • 2 tsp ground annatto
  • 2 tsp allspice
  • ¾ cup shrimp stock
  • ¼ cup onion
  • 2 clove garlic
  • 2 tbsp white vinegar
  • 3 thyme sprigs
  • 1 pinch salt (optional)

Steps

  1. In a bowl, combine shrimp with chopped Scotch Bonnet, all-purpose seasoning, annatto, and allspice; marinate for 10 minutes.
  2. Heat a large pan over medium heat, add shrimp stock, and bring to a simmer.
  3. Stir in diced onion and minced garlic, cooking until softened and fragrant (about 2 minutes).
  4. Add the seasoned shrimp and thyme sprigs to the pan. Cover and cook for 5-7 minutes, stirring occasionally, until shrimp are bright orange and cooked through.
  5. Stir in white vinegar and cook for another minute. Taste and add salt if needed.
  6. Remove shrimp with a slotted spoon to a plate. Serve hot, drizzled with some cooking liquid.
