Jamaican Pepper Shrimp

Ingredients
- 1 lb shrimp
- 2 Scotch Bonnet peppers
- 1 tbsp all-purpose seasoning
- 2 tsp ground annatto
- 2 tsp allspice
- ¾ cup shrimp stock
- ¼ cup onion
- 2 clove garlic
- 2 tbsp white vinegar
- 3 thyme sprigs
- 1 pinch salt (optional)
Steps
- In a bowl, combine shrimp with chopped Scotch Bonnet, all-purpose seasoning, annatto, and allspice; marinate for 10 minutes.
- Heat a large pan over medium heat, add shrimp stock, and bring to a simmer.
- Stir in diced onion and minced garlic, cooking until softened and fragrant (about 2 minutes).
- Add the seasoned shrimp and thyme sprigs to the pan. Cover and cook for 5-7 minutes, stirring occasionally, until shrimp are bright orange and cooked through.
- Stir in white vinegar and cook for another minute. Taste and add salt if needed.
- Remove shrimp with a slotted spoon to a plate. Serve hot, drizzled with some cooking liquid.
