Jamaican Steamed Cabbage

Ingredients

  • 1 head cabbage
  • 2 carrots
  • 1 plum tomatoes
  • 1 onion
  • 4 cloves garlic
  • 4 green onions
  • 4 sprigs thyme
  • ½ scotch bonnet (optional)
  • 2 tbsp water
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 2 tsp kosher salt
  • 1 tsp black pepper

Steps

  1. Chop cabbage, slice carrots, chop plum tomatoes and onion, mince garlic, and chop green onions.
  2. Add all ingredients (cabbage, carrots, tomatoes, onion, garlic, green onions, thyme, scotch bonnet, water, olive oil, butter, salt, and pepper) to a large pan.
  3. Cover the pan with a lid and cook over medium heat for 10 minutes, stirring occasionally.
  4. Reduce heat to low and continue to cook for an additional 5 minutes, or until the cabbage is soft and tender.
  5. Remove the pan from the heat.
  6. Remove the thyme sprigs before serving.
