Ingredients

  • 300 g sushi rice
  • 400 ml water
  • 1 tbs mirin
  • 200 ml dashi (optional)
  • 1 tbs pickle juice (optional)
  • 2 green onions (optional)

Steps

  1. Rinse the sushi rice in a bowl with cold water, massaging the grains until the water becomes cloudy. Drain and repeat 5-6 times until the water runs clear.
  2. Combine the rinsed rice with 400ml water (or 200ml dashi and 200ml water) in a saucepan.
  3. Bring the mixture to a boil, then reduce heat to a low simmer, cover with a tight-fitting lid, and cook for 15 minutes.
  4. Remove the saucepan from heat and let it sit, covered, for another 15 minutes.
  5. Stir in the mirin, then remove the lid and fluff the rice.
  6. Serve immediately, garnished with pickle juice and green onions if desired.
