Japanese Gohan Rice
Perfectly cooked Japanese short-grain rice, subtly flavored with mirin, forms the ideal base for any Japanese meal.
Ingredients
- 300 g sushi rice
- 400 ml water
- 1 tbs mirin
- 200 ml dashi (optional)
- 1 tbs pickle juice (optional)
- 2 green onions (optional)
Steps
- Rinse the sushi rice in a bowl with cold water, massaging the grains until the water becomes cloudy. Drain and repeat 5-6 times until the water runs clear.
- Combine the rinsed rice with 400ml water (or 200ml dashi and 200ml water) in a saucepan.
- Bring the mixture to a boil, then reduce heat to a low simmer, cover with a tight-fitting lid, and cook for 15 minutes.
- Remove the saucepan from heat and let it sit, covered, for another 15 minutes.
- Stir in the mirin, then remove the lid and fluff the rice.
- Serve immediately, garnished with pickle juice and green onions if desired.
