Kielbasa and Cabbage

Ingredients

  • 1½ lb Smoked Kielbasa Sausage
  • 1½ head Green Cabbage
  • 1 Yellow Onion
  • 3 clove Garlic
  • 2 tbsp Apple Cider Vinegar
  • 1 tbsp Olive Oil
  • ¾ tsp Salt
  • ½ tsp Black Pepper
  • 2 tbsp Fresh Parsley (optional)

Steps

  1. Slice the kielbasa into 1/2-inch thick rounds. Halve and core the cabbage, then chop into 1-inch pieces. Dice the onion and mince the garlic.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the kielbasa and cook until browned and slightly crispy, about 5-7 minutes. Remove kielbasa and set aside, leaving rendered fat in the pan.
  3. Add the diced onion to the skillet and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the chopped cabbage to the skillet. Season with salt and pepper. Cook, stirring occasionally, until the cabbage wilts and softens, about 8-12 minutes.
  5. Stir in the apple cider vinegar and return the cooked kielbasa to the skillet. Toss to combine and heat through for 2-3 minutes.
  6. Taste and adjust seasonings if needed. Garnish with fresh parsley, if desired, before serving.
