Kielbasa and Potatoes
A hearty and comforting one-pan meal featuring savory kielbasa sausage, tender potatoes, and sweet bell peppers.
Ingredients
- 14 oz smoked kielbasa sausage
- 1½ lb Yukon Gold potatoes
- 2 bell peppers (any color)
- 1 yellow onion
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley, chopped (optional)
Steps
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- Slice the kielbasa into 1/2-inch thick rounds. Dice the potatoes into 1-inch cubes. Core and chop the bell peppers into 1-inch pieces. Chop the onion into similar 1-inch pieces.
- In a large bowl, combine the diced potatoes, bell peppers, and onion. Drizzle with olive oil, then sprinkle with garlic powder, paprika, salt, and black pepper. Toss until all vegetables are evenly coated.
- Spread the seasoned vegetables in a single layer on the prepared baking sheet. Add the sliced kielbasa to the baking sheet, distributing it evenly among the vegetables.
- Roast for 20 minutes, then flip the kielbasa and vegetables. Continue roasting for another 15-20 minutes, or until potatoes are tender and browned and kielbasa is lightly caramelized.
- Remove from oven. Garnish with fresh chopped parsley, if desired, and serve immediately.
