Kielbasa with Pierogies and Onions

Ingredients

  • 14 oz smoked kielbasa sausage
  • 16 oz frozen potato and cheese pierogies
  • 1 yellow onion
  • 2 tbsp butter
  • 1 tbsp vegetable oil
  • ½ cup sour cream (optional)
  • 2 tbsp fresh dill (optional)
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Slice the kielbasa into 1/2-inch thick rounds and dice the yellow onion.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add the kielbasa and cook for 5-7 minutes, turning occasionally, until browned. Remove kielbasa from the skillet and set aside, leaving any drippings.
  3. Add butter to the same skillet. Add the diced onions and cook over medium heat for 8-10 minutes, stirring occasionally, until softened and caramelized. Season with salt and pepper.
  4. Add the frozen pierogies to the skillet with the onions. Cook for 5-7 minutes per side, or until golden brown and heated through.
  5. Return the cooked kielbasa to the skillet with the pierogies and onions. Toss gently to combine and heat through for 2-3 minutes.
  6. Serve hot, optionally with a dollop of sour cream and a sprinkle of fresh dill.
