Lamb Kofta Bowl
A flavorful and satisfying bowl featuring spiced lamb kofta, fresh vegetables, and a creamy tzatziki sauce.
Ingredients
- 1¼ lb ground lamb
- ½ red onion
- 2 garlic cloves
- ¼ cup fresh parsley
- 2 tbsp fresh mint
- 1½ tsp cumin
- 1 tsp coriander
- ½ tsp paprika
- ¾ tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
- 1 cucumber
- 1½ cups grape tomatoes
- 4 cups romaine lettuce
- 4 pita bread (optional)
- 1 cup plain Greek yogurt
- 1 tbsp lemon juice
Steps
- Finely mince half a red onion, garlic, parsley, and mint. In a large bowl, combine ground lamb with minced aromatics, cumin, coriander, paprika, salt, and pepper. Mix well to combine.
- Form the lamb mixture into 12-16 small oval-shaped kofta. Heat olive oil in a large skillet over medium-high heat.
- Cook the kofta in batches for 3-4 minutes per side, until browned and cooked through. Remove from skillet and set aside.
- Dice the cucumber and halve the grape tomatoes. Roughly chop the romaine lettuce.
- For the tzatziki, grate the remaining half of the red onion into the Greek yogurt. Add lemon juice, a pinch of salt, and pepper. Stir to combine.
- Assemble bowls with a base of chopped romaine lettuce. Top with cooked lamb kofta, diced cucumber, and halved grape tomatoes. Drizzle with tzatziki sauce. Serve with warm pita bread if desired.
