Mediterranean Salmon with Roasted Vegetables
Enjoy a healthy and flavorful Mediterranean-inspired meal with perfectly roasted salmon and a medley of colorful vegetables.
Ingredients
- 1½ lb salmon fillets
- 2 medium zucchini
- 2 medium bell peppers
- 1 pint cherry tomatoes
- 1 medium red onion
- 4 clove garlic
- 4 tbsp olive oil
- 1 tsp dried oregano
- ½ tsp dried thyme
- 1 tsp salt
- ½ tsp black pepper
- 1 lemon
- ¼ cup fresh parsley (optional)
- ½ cup feta cheese (optional)
Steps
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Chop zucchini, bell peppers, and red onion into 1-inch pieces. Mince garlic. Halve cherry tomatoes.
- On the baking sheet, toss the chopped vegetables with 3 tablespoons of olive oil, minced garlic, oregano, thyme, salt, and pepper. Spread in a single layer.
- Roast vegetables for 15 minutes. While vegetables roast, pat salmon fillets dry and season with salt and pepper.
- Remove baking sheet from oven. Push vegetables to one side and place salmon fillets on the other side. Drizzle salmon with remaining 1 tablespoon of olive oil.
- Return to oven and roast for another 10-15 minutes, or until salmon is cooked through and flakes easily.
- Squeeze fresh lemon juice over the salmon and vegetables. Garnish with fresh parsley and crumbled feta cheese, if desired.
- Serve immediately.
