Mediterranean Salmon with Roasted Vegetables

Ingredients

  • 1½ lb salmon fillets
  • 2 medium zucchini
  • 2 medium bell peppers
  • 1 pint cherry tomatoes
  • 1 medium red onion
  • 4 clove garlic
  • 4 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 lemon
  • ¼ cup fresh parsley (optional)
  • ½ cup feta cheese (optional)

Steps

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Chop zucchini, bell peppers, and red onion into 1-inch pieces. Mince garlic. Halve cherry tomatoes.
  3. On the baking sheet, toss the chopped vegetables with 3 tablespoons of olive oil, minced garlic, oregano, thyme, salt, and pepper. Spread in a single layer.
  4. Roast vegetables for 15 minutes. While vegetables roast, pat salmon fillets dry and season with salt and pepper.
  5. Remove baking sheet from oven. Push vegetables to one side and place salmon fillets on the other side. Drizzle salmon with remaining 1 tablespoon of olive oil.
  6. Return to oven and roast for another 10-15 minutes, or until salmon is cooked through and flakes easily.
  7. Squeeze fresh lemon juice over the salmon and vegetables. Garnish with fresh parsley and crumbled feta cheese, if desired.
  8. Serve immediately.
