Ingredients

  • 4 cup cooked rice
  • 15 oz black beans
  • 1½ cup corn kernels
  • ½ red onion
  • ¼ cup cilantro
  • 1 lime
  • 2 avocado
  • ¾ cup salsa
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp salt
  • 1 tbsp olive oil

Steps

  1. Prepare rice according to package directions.
  2. Drain and rinse black beans. In a medium saucepan, heat olive oil over medium heat. Add black beans, corn, chili powder, cumin, and salt. Cook for 5-7 minutes, stirring occasionally, until heated through.
  3. Finely dice red onion and chop cilantro. Halve, pit, and dice avocados.
  4. In a large bowl, combine the seasoned black bean and corn mixture with the cooked rice.
  5. Divide the rice mixture among four bowls. Top each with diced avocado, red onion, cilantro, and a dollop of salsa.
  6. Squeeze fresh lime juice over each bowl before serving.
