Mexican Rice Bowl
A vibrant and customizable bowl featuring seasoned rice, black beans, corn, fresh salsa, and creamy avocado.
Ingredients
- 4 cup cooked rice
- 15 oz black beans
- 1½ cup corn kernels
- ½ red onion
- ¼ cup cilantro
- 1 lime
- 2 avocado
- ¾ cup salsa
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp salt
- 1 tbsp olive oil
Steps
- Prepare rice according to package directions.
- Drain and rinse black beans. In a medium saucepan, heat olive oil over medium heat. Add black beans, corn, chili powder, cumin, and salt. Cook for 5-7 minutes, stirring occasionally, until heated through.
- Finely dice red onion and chop cilantro. Halve, pit, and dice avocados.
- In a large bowl, combine the seasoned black bean and corn mixture with the cooked rice.
- Divide the rice mixture among four bowls. Top each with diced avocado, red onion, cilantro, and a dollop of salsa.
- Squeeze fresh lime juice over each bowl before serving.
