Ingredients

  • 1½ lb salmon fillets
  • 4 tbsp white miso paste
  • 2 tbsp mirin
  • 2 tbsp sake (cooking wine)
  • 1 tbsp sugar
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp ginger, grated
  • 2 clove garlic, minced
  • 2 green onions, sliced (optional)
  • 1 tsp sesame seeds (optional)
  • 1 tbsp vegetable oil

Steps

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together miso paste, mirin, sake, sugar, soy sauce, sesame oil, grated ginger, and minced garlic to create the glaze.
  3. Place salmon fillets on the prepared baking sheet. Brush about half of the miso glaze generously over the salmon.
  4. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. For extra caramelization, broil for the last 1-2 minutes, watching carefully to prevent burning.
  5. Serve immediately, garnished with sliced green onions and sesame seeds if desired.
