Mushroom Tacos

Ingredients

  • 16 oz cremini mushrooms
  • ½ yellow onion
  • 2 clove garlic
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 lime
  • 12 corn tortillas
  • ¼ cup cilantro (optional)
  • ¼ cup cotija cheese (optional)
  • ½ cup salsa (optional)

Steps

  1. Clean and slice mushrooms. Dice the yellow onion and mince the garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Add mushrooms and cook until browned and most liquid has evaporated, about 5-7 minutes.
  3. Add diced onion and minced garlic to the skillet with the mushrooms. Cook until onion is softened, about 3-4 minutes.
  4. Stir in chili powder, cumin, smoked paprika, salt, and black pepper. Cook for 1 minute more until fragrant.
  5. Remove from heat and squeeze the juice of half a lime over the mushroom mixture.
  6. Warm tortillas according to package directions (microwave, dry skillet, or oven).
  7. Assemble tacos by filling warm tortillas with the mushroom mixture. Garnish with fresh cilantro, cotija cheese, and salsa, if desired.
