Mushroom Tacos
Savory seasoned mushrooms make a fantastic vegetarian filling for these quick and flavorful tacos.
Ingredients
- 16 oz cremini mushrooms
- ½ yellow onion
- 2 clove garlic
- 2 tbsp olive oil
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 lime
- 12 corn tortillas
- ¼ cup cilantro (optional)
- ¼ cup cotija cheese (optional)
- ½ cup salsa (optional)
Steps
- Clean and slice mushrooms. Dice the yellow onion and mince the garlic.
- Heat olive oil in a large skillet over medium-high heat. Add mushrooms and cook until browned and most liquid has evaporated, about 5-7 minutes.
- Add diced onion and minced garlic to the skillet with the mushrooms. Cook until onion is softened, about 3-4 minutes.
- Stir in chili powder, cumin, smoked paprika, salt, and black pepper. Cook for 1 minute more until fragrant.
- Remove from heat and squeeze the juice of half a lime over the mushroom mixture.
- Warm tortillas according to package directions (microwave, dry skillet, or oven).
- Assemble tacos by filling warm tortillas with the mushroom mixture. Garnish with fresh cilantro, cotija cheese, and salsa, if desired.
