Mussels Marinara

Ingredients
- 2 lb fresh mussels
- 28 oz canned crushed tomatoes
- 4 clove garlic
- ½ cup dry white wine
- 2 tbsp olive oil
- ¼ cup fresh parsley
- ½ tsp red pepper flakes (optional)
- ½ tsp salt
- ¼ tsp black pepper
- 1 loaf crusty bread (optional)
Steps
- Clean the mussels by scrubbing them and removing any beards. Discard any mussels that are open and do not close when tapped.
- Mince the garlic and chop the fresh parsley.
- Heat olive oil in a large pot or Dutch oven over medium heat. Add minced garlic and red pepper flakes (if using), and sauté for 1 minute until fragrant.
- Pour in the crushed tomatoes, white wine, salt, and pepper. Bring the sauce to a simmer and cook for 5-7 minutes, allowing flavors to meld.
- Add the cleaned mussels to the pot, cover tightly, and steam for 5-7 minutes, or until all mussels have opened. Discard any unopened mussels.
- Stir in the fresh parsley. Serve immediately with crusty bread for dipping.
