One-Pot Beef Stroganoff
Enjoy a creamy and savory beef stroganoff with tender beef and mushrooms, all cooked in a single pot for easy cleanup.
Ingredients
- 1½ lb beef sirloin or stew meat
- 1 medium yellow onion
- 8 oz cremini mushrooms
- 3 clove garlic
- 4 cup beef broth
- 8 oz egg noodles
- ¾ cup sour cream
- 1 tbsp Dijon mustard
- 2 tbsp all-purpose flour
- 2 tbsp vegetable oil
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley (optional)
Steps
- Cut beef into 1-inch pieces. Season with salt and pepper.
- Heat oil in a large pot or Dutch oven over medium-high heat. Brown beef in batches, then remove and set aside.
- Add chopped onion and sliced mushrooms to the pot, cooking until softened, about 5-7 minutes. Stir in minced garlic and flour, cooking for 1 minute.
- Return beef to the pot. Stir in beef broth and Dijon mustard. Bring to a simmer.
- Add egg noodles, ensuring they are mostly submerged. Cook according to package directions, about 8-10 minutes, stirring occasionally, until noodles are tender and sauce has thickened.
- Remove from heat. Stir in sour cream until well combined. Do not boil after adding sour cream.
- Taste and adjust seasoning if needed. Garnish with fresh parsley, if desired, and serve immediately.
