One-Pot Beef Stroganoff

Ingredients

  • 1½ lb beef sirloin or stew meat
  • 1 medium yellow onion
  • 8 oz cremini mushrooms
  • 3 clove garlic
  • 4 cup beef broth
  • 8 oz egg noodles
  • ¾ cup sour cream
  • 1 tbsp Dijon mustard
  • 2 tbsp all-purpose flour
  • 2 tbsp vegetable oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley (optional)

Steps

  1. Cut beef into 1-inch pieces. Season with salt and pepper.
  2. Heat oil in a large pot or Dutch oven over medium-high heat. Brown beef in batches, then remove and set aside.
  3. Add chopped onion and sliced mushrooms to the pot, cooking until softened, about 5-7 minutes. Stir in minced garlic and flour, cooking for 1 minute.
  4. Return beef to the pot. Stir in beef broth and Dijon mustard. Bring to a simmer.
  5. Add egg noodles, ensuring they are mostly submerged. Cook according to package directions, about 8-10 minutes, stirring occasionally, until noodles are tender and sauce has thickened.
  6. Remove from heat. Stir in sour cream until well combined. Do not boil after adding sour cream.
  7. Taste and adjust seasoning if needed. Garnish with fresh parsley, if desired, and serve immediately.
