One-Skillet Chicken Parmesan Pasta

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 3 cloves garlic
  • 28 oz canned crushed tomatoes
  • 2 cups chicken broth
  • 12 oz dried penne pasta
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1½ cups mozzarella cheese, shredded
  • ½ cup Parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped (optional)

Steps

  1. Cut chicken breasts into 1-inch pieces. Mince garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add minced garlic to the skillet and cook for 1 minute until fragrant. Stir in crushed tomatoes, chicken broth, penne pasta, oregano, basil, salt, and pepper. Bring to a boil.
  4. Reduce heat to medium-low, cover, and simmer for 15-18 minutes, or until pasta is al dente, stirring occasionally to prevent sticking.
  5. Stir the cooked chicken back into the skillet. Sprinkle mozzarella and Parmesan cheeses over the top.
  6. Cover the skillet and cook for another 2-3 minutes, or until cheese is melted and bubbly.
  7. Garnish with fresh parsley, if desired, and serve hot.
