One-Skillet Chicken Parmesan Pasta

Ingredients
- 1½ lb boneless, skinless chicken breasts
- 2 tbsp olive oil
- 3 cloves garlic
- 28 oz canned crushed tomatoes
- 2 cups chicken broth
- 12 oz dried penne pasta
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp salt
- ¼ tsp black pepper
- 1½ cups mozzarella cheese, shredded
- ½ cup Parmesan cheese, grated
- 2 tbsp fresh parsley, chopped (optional)
Steps
- Cut chicken breasts into 1-inch pieces. Mince garlic.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add minced garlic to the skillet and cook for 1 minute until fragrant. Stir in crushed tomatoes, chicken broth, penne pasta, oregano, basil, salt, and pepper. Bring to a boil.
- Reduce heat to medium-low, cover, and simmer for 15-18 minutes, or until pasta is al dente, stirring occasionally to prevent sticking.
- Stir the cooked chicken back into the skillet. Sprinkle mozzarella and Parmesan cheeses over the top.
- Cover the skillet and cook for another 2-3 minutes, or until cheese is melted and bubbly.
- Garnish with fresh parsley, if desired, and serve hot.
