Patatas Bravas

Crispy roasted potatoes smothered in a smoky, spicy tomato sauce, a classic Spanish tapa.

Ingredients

  • 2 lb potatoes
  • 5 tbsp olive oil
  • 1 small onion
  • 2 clove garlic
  • 14½ oz canned diced tomatoes
  • 1 tbsp tomato paste
  • 2 tsp paprika
  • ¼ tsp chili powder
  • ¼ tsp sugar
  • ½ tsp salt
  • 2 tbsp fresh parsley (optional)

Steps

  1. Preheat oven to 400F (200C). Pat potatoes dry, then toss with 2 tablespoons olive oil, salt, and pepper in a roasting tin.
  2. Roast potatoes for 40-50 minutes, or until crisp and golden, flipping halfway through.
  3. While potatoes roast, heat 3 tablespoons olive oil in a pan over medium heat. Add onion and cook for 5 minutes until softened.
  4. Stir in garlic, canned tomatoes, tomato paste, paprika, chili powder, sugar, and a pinch of salt. Bring to a boil, then reduce heat and simmer for 10 minutes until the sauce thickens.
  5. Remove potatoes from the oven and transfer to serving dishes.
  6. Spoon the hot tomato sauce generously over the potatoes.
  7. Garnish with fresh chopped parsley, if desired, and serve immediately.
