Patatas Bravas
Crispy roasted potatoes smothered in a smoky, spicy tomato sauce, a classic Spanish tapa.
Ingredients
- 2 lb potatoes
- 5 tbsp olive oil
- 1 small onion
- 2 clove garlic
- 14½ oz canned diced tomatoes
- 1 tbsp tomato paste
- 2 tsp paprika
- ¼ tsp chili powder
- ¼ tsp sugar
- ½ tsp salt
- 2 tbsp fresh parsley (optional)
Steps
- Preheat oven to 400F (200C). Pat potatoes dry, then toss with 2 tablespoons olive oil, salt, and pepper in a roasting tin.
- Roast potatoes for 40-50 minutes, or until crisp and golden, flipping halfway through.
- While potatoes roast, heat 3 tablespoons olive oil in a pan over medium heat. Add onion and cook for 5 minutes until softened.
- Stir in garlic, canned tomatoes, tomato paste, paprika, chili powder, sugar, and a pinch of salt. Bring to a boil, then reduce heat and simmer for 10 minutes until the sauce thickens.
- Remove potatoes from the oven and transfer to serving dishes.
- Spoon the hot tomato sauce generously over the potatoes.
- Garnish with fresh chopped parsley, if desired, and serve immediately.
