Ingredients

  • 1 lb penne pasta
  • 2 tbsp unsalted butter
  • 1 medium shallot
  • 2 clove garlic
  • 28 oz crushed tomatoes
  • ¼ cup vodka
  • ½ cup heavy cream
  • ½ tsp red pepper flakes (optional)
  • ½ cup Parmesan cheese (optional)
  • ¼ cup fresh basil (optional)
  • 1 tsp salt
  • ½ tsp black pepper

Steps

  1. Cook penne according to package directions until al dente. Reserve 1 cup of pasta water, then drain the penne.
  2. While pasta cooks, melt butter in a large skillet over medium heat. Add minced shallot and cook until softened, about 3-4 minutes.
  3. Stir in minced garlic and red pepper flakes (if using) and cook for 1 minute until fragrant.
  4. Pour in the vodka and simmer for 2-3 minutes until mostly evaporated.
  5. Add crushed tomatoes, salt, and pepper. Bring to a gentle simmer and cook for 10-15 minutes, stirring occasionally, until the sauce thickens slightly.
  6. Stir in the heavy cream. Add the cooked penne to the sauce and toss to combine. If the sauce is too thick, add a splash of reserved pasta water.
  7. Serve immediately, garnished with grated Parmesan cheese and fresh basil, if desired.
