Penne alla Vodka
A creamy and rich Italian-American pasta dish featuring penne in a tomato-vodka sauce, often with a hint of spice.
Ingredients
- 1 lb penne pasta
- 2 tbsp unsalted butter
- 1 medium shallot
- 2 clove garlic
- 28 oz crushed tomatoes
- ¼ cup vodka
- ½ cup heavy cream
- ½ tsp red pepper flakes (optional)
- ½ cup Parmesan cheese (optional)
- ¼ cup fresh basil (optional)
- 1 tsp salt
- ½ tsp black pepper
Steps
- Cook penne according to package directions until al dente. Reserve 1 cup of pasta water, then drain the penne.
- While pasta cooks, melt butter in a large skillet over medium heat. Add minced shallot and cook until softened, about 3-4 minutes.
- Stir in minced garlic and red pepper flakes (if using) and cook for 1 minute until fragrant.
- Pour in the vodka and simmer for 2-3 minutes until mostly evaporated.
- Add crushed tomatoes, salt, and pepper. Bring to a gentle simmer and cook for 10-15 minutes, stirring occasionally, until the sauce thickens slightly.
- Stir in the heavy cream. Add the cooked penne to the sauce and toss to combine. If the sauce is too thick, add a splash of reserved pasta water.
- Serve immediately, garnished with grated Parmesan cheese and fresh basil, if desired.
