Pork Fried Rice
A classic Chinese-American dish featuring tender pork, scrambled eggs, and colorful vegetables stir-fried with rice in a savory sauce.
Ingredients
- 4 cup cooked rice, day-old
- ¾ lb pork loin
- 2 eggs
- 4 tbsp soy sauce
- 2 tbsp oyster sauce (optional)
- 1 tsp sesame oil
- 2 tbsp vegetable oil
- 2 clove garlic
- 1 tbsp ginger
- ½ cup carrots
- ½ cup frozen peas
- 2 green onions
- ½ white onion
Steps
- Dice pork into small pieces. Whisk eggs in a small bowl.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add pork and cook until browned and cooked through, then remove and set aside.
- Add remaining vegetable oil to the skillet. Pour in whisked eggs and scramble until just set, then remove and set aside.
- Add minced garlic, grated ginger, and diced white onion to the skillet. Sauté for 2-3 minutes until fragrant and softened.
- Stir in diced carrots and frozen peas, cooking for 3-4 minutes until tender-crisp.
- Add day-old rice to the skillet, breaking up any clumps. Stir in soy sauce, oyster sauce (if using), and sesame oil. Cook, stirring constantly, for 3-5 minutes until rice is heated through and slightly crispy.
- Return cooked pork and scrambled eggs to the skillet. Toss everything together to combine and heat through.
- Garnish with sliced green onions and serve immediately.
