Pork Fried Rice

Ingredients

  • 4 cup cooked rice, day-old
  • ¾ lb pork loin
  • 2 eggs
  • 4 tbsp soy sauce
  • 2 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • 2 clove garlic
  • 1 tbsp ginger
  • ½ cup carrots
  • ½ cup frozen peas
  • 2 green onions
  • ½ white onion

Steps

  1. Dice pork into small pieces. Whisk eggs in a small bowl.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add pork and cook until browned and cooked through, then remove and set aside.
  3. Add remaining vegetable oil to the skillet. Pour in whisked eggs and scramble until just set, then remove and set aside.
  4. Add minced garlic, grated ginger, and diced white onion to the skillet. Sauté for 2-3 minutes until fragrant and softened.
  5. Stir in diced carrots and frozen peas, cooking for 3-4 minutes until tender-crisp.
  6. Add day-old rice to the skillet, breaking up any clumps. Stir in soy sauce, oyster sauce (if using), and sesame oil. Cook, stirring constantly, for 3-5 minutes until rice is heated through and slightly crispy.
  7. Return cooked pork and scrambled eggs to the skillet. Toss everything together to combine and heat through.
  8. Garnish with sliced green onions and serve immediately.
