Pork Lo Mein

Ingredients

  • 1 lb pork loin
  • 16 oz lo mein noodles
  • ½ cup soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 3 clove garlic
  • 1 tbsp ginger
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 2 cup broccoli florets
  • 2 medium carrots
  • 1 medium bell pepper
  • 3 scallions (optional)
  • 2 tbsp vegetable oil
  • ½ tsp red pepper flakes (optional)

Steps

  1. Slice pork loin into thin strips. Mince garlic and grate ginger. Slice carrots and bell pepper into thin strips. Chop broccoli into small florets.
  2. In a small bowl, whisk together soy sauce, sesame oil, oyster sauce, rice vinegar, brown sugar, minced garlic, grated ginger, and red pepper flakes (if using). In another small bowl, mix cornstarch with water to create a slurry.
  3. Cook lo mein noodles according to package directions, then drain and rinse with cold water to prevent sticking.
  4. Heat vegetable oil in a large skillet or wok over medium-high heat. Add pork strips and cook until browned and cooked through, about 5-7 minutes. Remove pork from skillet and set aside.
  5. Add broccoli, carrots, and bell pepper to the skillet and stir-fry for 3-5 minutes until crisp-tender.
  6. Return pork to the skillet with the vegetables. Add the cooked noodles and pour the sauce mixture over everything. Toss to coat evenly.
  7. Stir in the cornstarch slurry and cook for another 1-2 minutes, stirring constantly, until the sauce thickens.
  8. Garnish with chopped scallions, if desired, and serve immediately.
