Potato Tacos
Crispy pan-fried potatoes seasoned with taco spices, served in warm tortillas with your favorite toppings for a satisfying vegetarian meal.
Ingredients
- 1½ lb Russet potatoes
- 3 tbsp Olive oil
- ½ Yellow onion
- 2 clove Garlic
- 1 tsp Chili powder
- ½ tsp Cumin
- ½ tsp Smoked paprika
- ¾ tsp Salt
- ¼ tsp Black pepper
- 12 Corn tortillas
- ¼ cup Cilantro (optional)
- 1 Lime (optional)
- ½ cup Salsa (optional)
- ¼ cup Cotija cheese (optional)
Steps
- Peel and dice potatoes into 1/2-inch cubes. Dice onion and mince garlic.
- Heat olive oil in a large skillet over medium-high heat. Add potatoes and cook for 10-15 minutes, stirring occasionally, until golden brown and tender.
- Add diced onion and minced garlic to the skillet with the potatoes. Cook for another 3-5 minutes until the onion softens.
- Stir in chili powder, cumin, smoked paprika, salt, and black pepper. Cook for 1 minute more, ensuring spices are fragrant and coat the potatoes.
- Warm tortillas according to package directions. Fill each tortilla with the seasoned potato mixture.
- Serve immediately with optional toppings such as fresh cilantro, a squeeze of lime, salsa, or crumbled Cotija cheese.
