Ingredients

  • 1½ lb Russet potatoes
  • 3 tbsp Olive oil
  • ½ Yellow onion
  • 2 clove Garlic
  • 1 tsp Chili powder
  • ½ tsp Cumin
  • ½ tsp Smoked paprika
  • ¾ tsp Salt
  • ¼ tsp Black pepper
  • 12 Corn tortillas
  • ¼ cup Cilantro (optional)
  • 1 Lime (optional)
  • ½ cup Salsa (optional)
  • ¼ cup Cotija cheese (optional)

Steps

  1. Peel and dice potatoes into 1/2-inch cubes. Dice onion and mince garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Add potatoes and cook for 10-15 minutes, stirring occasionally, until golden brown and tender.
  3. Add diced onion and minced garlic to the skillet with the potatoes. Cook for another 3-5 minutes until the onion softens.
  4. Stir in chili powder, cumin, smoked paprika, salt, and black pepper. Cook for 1 minute more, ensuring spices are fragrant and coat the potatoes.
  5. Warm tortillas according to package directions. Fill each tortilla with the seasoned potato mixture.
  6. Serve immediately with optional toppings such as fresh cilantro, a squeeze of lime, salsa, or crumbled Cotija cheese.
