Pressure Cooker Sausage and Peppers

Ingredients

  • 1½ lb Italian sausage
  • 1 tbsp Olive oil
  • 1 Yellow onion
  • 1 Red bell pepper
  • 1 Green bell pepper
  • 3 clove Garlic
  • 14½ oz Crushed tomatoes
  • ½ cup Chicken broth
  • 1 tsp Dried oregano
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • 2 tbsp Fresh basil (optional)
  • 4 slices Crusty bread (optional)

Steps

  1. Slice Italian sausages into 1-inch pieces. Dice the onion and bell peppers into 1-inch pieces. Mince the garlic.
  2. Set your pressure cooker to 'Sauté' mode. Add olive oil, then brown the sausage pieces on all sides. Remove sausage and set aside.
  3. Add diced onion and bell peppers to the pot and sauté for 5-7 minutes until softened. Stir in minced garlic and cook for 1 minute more.
  4. Return the sausage to the pot. Add crushed tomatoes, chicken broth, dried oregano, salt, and black pepper. Stir to combine.
  5. Secure the lid on the pressure cooker and set to 'Manual' or 'Pressure Cook' on high for 8 minutes.
  6. Once cooking is complete, allow for a 5-minute natural release, then quick release any remaining pressure.
  7. Stir well and serve hot, garnished with fresh basil if desired, alongside crusty bread.
