Pressure Cooker Sausage and Peppers
A quick and flavorful one-pot meal featuring tender sausages, bell peppers, and onions cooked to perfection in a pressure cooker.
Ingredients
- 1½ lb Italian sausage
- 1 tbsp Olive oil
- 1 Yellow onion
- 1 Red bell pepper
- 1 Green bell pepper
- 3 clove Garlic
- 14½ oz Crushed tomatoes
- ½ cup Chicken broth
- 1 tsp Dried oregano
- ½ tsp Salt
- ¼ tsp Black pepper
- 2 tbsp Fresh basil (optional)
- 4 slices Crusty bread (optional)
Steps
- Slice Italian sausages into 1-inch pieces. Dice the onion and bell peppers into 1-inch pieces. Mince the garlic.
- Set your pressure cooker to 'Sauté' mode. Add olive oil, then brown the sausage pieces on all sides. Remove sausage and set aside.
- Add diced onion and bell peppers to the pot and sauté for 5-7 minutes until softened. Stir in minced garlic and cook for 1 minute more.
- Return the sausage to the pot. Add crushed tomatoes, chicken broth, dried oregano, salt, and black pepper. Stir to combine.
- Secure the lid on the pressure cooker and set to 'Manual' or 'Pressure Cook' on high for 8 minutes.
- Once cooking is complete, allow for a 5-minute natural release, then quick release any remaining pressure.
- Stir well and serve hot, garnished with fresh basil if desired, alongside crusty bread.
