Ingredients

  • 1½ lb salmon fillets
  • 7 oz rice noodles
  • 6 scallions
  • 3½ oz petit pois
  • 3 oz red chili (optional)
  • 3 oz fresh cilantro
  • 3 lime
  • 4 tbsp butter
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Preheat oven to 400F (200C).
  2. Place rice noodles in a bowl, cover with boiling water, and let sit for 2 minutes until pliable. Drain well.
  3. Return noodles to the bowl. Add sliced scallions, petit pois, salt, pepper, and 1 tablespoon of butter. Mix until butter melts.
  4. Divide the noodle mixture onto four large squares of baking parchment. Place a salmon fillet on top of each noodle pile.
  5. Slice the remaining butter and distribute over the salmon fillets.
  6. Bring the ends of the parchment paper over the fish, fold to seal, and tuck the ends underneath to create sealed parcels.
  7. Place parcels on a baking sheet and bake for 15-20 minutes, or until salmon is cooked through.
  8. Transfer parcels to plates and serve immediately, garnished with fresh chili, cilantro, and a squeeze of lime.
