Salmon Noodle Wraps
Light and flavorful Vietnamese-inspired salmon and noodle parcels baked with fresh herbs and a hint of spice.
Ingredients
- 1½ lb salmon fillets
- 7 oz rice noodles
- 6 scallions
- 3½ oz petit pois
- 3 oz red chili (optional)
- 3 oz fresh cilantro
- 3 lime
- 4 tbsp butter
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Preheat oven to 400F (200C).
- Place rice noodles in a bowl, cover with boiling water, and let sit for 2 minutes until pliable. Drain well.
- Return noodles to the bowl. Add sliced scallions, petit pois, salt, pepper, and 1 tablespoon of butter. Mix until butter melts.
- Divide the noodle mixture onto four large squares of baking parchment. Place a salmon fillet on top of each noodle pile.
- Slice the remaining butter and distribute over the salmon fillets.
- Bring the ends of the parchment paper over the fish, fold to seal, and tuck the ends underneath to create sealed parcels.
- Place parcels on a baking sheet and bake for 15-20 minutes, or until salmon is cooked through.
- Transfer parcels to plates and serve immediately, garnished with fresh chili, cilantro, and a squeeze of lime.
