Salmon Quiche

Ingredients

  • 1 pie crust
  • ¾ lb salmon fillet
  • 4 large eggs
  • 1 cup heavy cream
  • ½ cup milk
  • 2 tbsp dill, fresh
  • 1 shallot
  • 1 cup Swiss cheese, shredded
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp butter

Steps

  1. Preheat oven to 375°F (190°C). Press the pie crust into a 9-inch pie dish.
  2. Bake the pie crust for 10-12 minutes, or until lightly golden. Remove from oven and set aside.
  3. Flake the cooked salmon into small pieces, removing any skin and bones. Finely dice the shallot. Roughly chop the fresh dill.
  4. In a large bowl, whisk together eggs, heavy cream, milk, salt, and pepper. Stir in the flaked salmon, diced shallot, chopped dill, and shredded Swiss cheese.
  5. Pour the salmon mixture evenly into the pre-baked pie crust.
  6. Bake for 40-50 minutes, or until the center is set and a knife inserted near the center comes out clean.
  7. Let the quiche cool for at least 10-15 minutes before slicing and serving.
