Salmon Tacos

Ingredients

  • 1½ lb salmon fillets
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 12 corn tortillas
  • 2 cup red cabbage
  • 2 lime
  • ½ cup cilantro (optional)
  • ½ cup mayonnaise
  • 1 tbsp sriracha (optional)

Steps

  1. Pat salmon fillets dry and season with chili powder, cumin, garlic powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Cook salmon for 3-5 minutes per side, until cooked through and flaky. Remove from skillet and flake into bite-sized pieces.
  3. While salmon cooks, thinly slice red cabbage and chop cilantro. In a small bowl, whisk together mayonnaise, the juice of one lime, and sriracha (if using) for the sauce.
  4. Warm tortillas according to package directions. You can heat them in a dry skillet, microwave, or oven.
  5. Assemble tacos: place flaked salmon in warm tortillas, top with red cabbage slaw, a squeeze of fresh lime juice, and a drizzle of the creamy sauce. Garnish with fresh cilantro if desired.
