Sausage and Gnocchi Skillet

Ingredients

  • 1 lb Italian sausage, mild or hot
  • 1 tbsp Olive oil
  • 1 medium Yellow onion
  • 3 cloves Garlic
  • 28 oz Crushed tomatoes
  • 17½ oz Potato gnocchi
  • 5 oz Fresh spinach
  • ½ cup Parmesan cheese, grated (optional)
  • ½ tsp Red pepper flakes (optional)
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • 2 tbsp Fresh basil, chopped (optional)

Steps

  1. Remove sausage from casings. Heat olive oil in a large skillet over medium-high heat. Add sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.
  2. Add chopped onion to the skillet and cook until softened, about 3-4 minutes. Stir in minced garlic and red pepper flakes (if using) and cook for 1 minute more until fragrant.
  3. Pour in crushed tomatoes, salt, and pepper. Bring the sauce to a simmer, then add the uncooked gnocchi directly to the skillet. Stir gently to coat.
  4. Cover the skillet and cook for 5-7 minutes, stirring occasionally, until the gnocchi are tender and cooked through.
  5. Stir in the fresh spinach until it wilts, about 1-2 minutes.
  6. Serve immediately, garnished with grated Parmesan cheese and fresh basil, if desired.
