Sausage and Kale Soup

Ingredients

  • 1 lb Italian sausage
  • 1 medium Yellow onion
  • 3 clove Garlic
  • 1½ lb Russet potatoes
  • 6 oz Kale
  • 6 cup Chicken broth
  • 1 tbsp Olive oil
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • ¼ tsp Red pepper flakes (optional)
  • ¼ cup Parmesan cheese (optional)

Steps

  1. Remove sausage from casings and crumble into a large pot or Dutch oven. Cook over medium-high heat, breaking it up with a spoon, until browned. Drain excess fat and set sausage aside.
  2. Add olive oil to the pot. Add diced onion and cook until softened, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant.
  3. Add chicken broth, diced potatoes, salt, and black pepper to the pot. Bring to a boil, then reduce heat, cover, and simmer for 10-15 minutes, or until potatoes are tender.
  4. Stir in the cooked sausage and chopped kale. Cook for 3-5 minutes, or until kale is wilted.
  5. Taste and adjust seasonings as needed. Serve hot, garnished with red pepper flakes and grated Parmesan cheese if desired.
