Sausage and Kale Soup
A hearty and comforting soup featuring savory Italian sausage, tender kale, and potatoes in a flavorful broth.
Ingredients
- 1 lb Italian sausage
- 1 medium Yellow onion
- 3 clove Garlic
- 1½ lb Russet potatoes
- 6 oz Kale
- 6 cup Chicken broth
- 1 tbsp Olive oil
- ½ tsp Salt
- ¼ tsp Black pepper
- ¼ tsp Red pepper flakes (optional)
- ¼ cup Parmesan cheese (optional)
Steps
- Remove sausage from casings and crumble into a large pot or Dutch oven. Cook over medium-high heat, breaking it up with a spoon, until browned. Drain excess fat and set sausage aside.
- Add olive oil to the pot. Add diced onion and cook until softened, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant.
- Add chicken broth, diced potatoes, salt, and black pepper to the pot. Bring to a boil, then reduce heat, cover, and simmer for 10-15 minutes, or until potatoes are tender.
- Stir in the cooked sausage and chopped kale. Cook for 3-5 minutes, or until kale is wilted.
- Taste and adjust seasonings as needed. Serve hot, garnished with red pepper flakes and grated Parmesan cheese if desired.
