Sausage and Peppers
A classic Italian-American dish featuring savory sausages, bell peppers, and onions, perfect for a hearty meal.
Ingredients
- 1½ lb Italian sausage
- 3 bell peppers
- 1 yellow onion
- 3 clove garlic
- 15 oz crushed tomatoes
- 2 tbsp olive oil
- ½ tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley (optional)
- 4 slices crusty bread (optional)
Steps
- Slice bell peppers and onion into strips, and mince the garlic.
- Heat olive oil in a large skillet over medium-high heat. Add sausages and brown them on all sides, then remove from skillet.
- Add sliced bell peppers and onion to the skillet, cooking until softened, about 8-10 minutes. Stir in minced garlic and cook for 1 minute more.
- Return sausages to the skillet. Add crushed tomatoes, oregano, salt, and pepper. Bring to a simmer.
- Reduce heat to medium-low, cover, and cook for 20-25 minutes, or until sausages are cooked through and flavors have melded.
- Garnish with fresh parsley, if desired, and serve hot, ideally with crusty bread.
