Sausage and Peppers

Ingredients

  • 1½ lb Italian sausage
  • 3 bell peppers
  • 1 yellow onion
  • 3 clove garlic
  • 15 oz crushed tomatoes
  • 2 tbsp olive oil
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley (optional)
  • 4 slices crusty bread (optional)

Steps

  1. Slice bell peppers and onion into strips, and mince the garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Add sausages and brown them on all sides, then remove from skillet.
  3. Add sliced bell peppers and onion to the skillet, cooking until softened, about 8-10 minutes. Stir in minced garlic and cook for 1 minute more.
  4. Return sausages to the skillet. Add crushed tomatoes, oregano, salt, and pepper. Bring to a simmer.
  5. Reduce heat to medium-low, cover, and cook for 20-25 minutes, or until sausages are cooked through and flavors have melded.
  6. Garnish with fresh parsley, if desired, and serve hot, ideally with crusty bread.
