Savory Crepes with Ham and Cheese
Delicate crepes filled with a classic combination of savory ham and melted cheese, perfect for a light meal or brunch.
Ingredients
- 1 cup all-purpose flour
- 2 large eggs
- 1½ cup milk
- ½ cup water
- 2 tbsp unsalted butter, melted
- ½ tsp salt
- ¼ tsp black pepper
- 8 oz deli ham, thinly sliced
- 6 oz Gruyere cheese, shredded
- 2 tbsp fresh chives, chopped (optional)
Steps
- In a large bowl, whisk together flour, eggs, milk, water, melted butter, salt, and pepper until the batter is smooth. Let the batter rest for at least 15 minutes at room temperature.
- Heat a lightly greased 8-inch non-stick skillet or crepe pan over medium heat. Pour about 1/4 cup of batter into the pan, tilting quickly to coat the bottom evenly.
- Cook for 1-2 minutes until the edges are lightly browned and the crepe easily lifts. Flip the crepe and cook for another 30-60 seconds.
- Transfer the cooked crepe to a plate. Repeat with the remaining batter, stacking crepes as they are done.
- To assemble, lay a crepe flat. Place a slice of ham and a sprinkle of shredded Gruyere cheese on one half of the crepe.
- Fold the crepe in half, then in half again to form a triangle. You can also roll them up or fold into a square.
- Return the filled crepes to the warm skillet for 1-2 minutes per side, or until the cheese is melted and the crepes are warmed through.
- Serve immediately, garnished with fresh chives if desired.
