Savory Crepes with Ham and Cheese

Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1½ cup milk
  • ½ cup water
  • 2 tbsp unsalted butter, melted
  • ½ tsp salt
  • ¼ tsp black pepper
  • 8 oz deli ham, thinly sliced
  • 6 oz Gruyere cheese, shredded
  • 2 tbsp fresh chives, chopped (optional)

Steps

  1. In a large bowl, whisk together flour, eggs, milk, water, melted butter, salt, and pepper until the batter is smooth. Let the batter rest for at least 15 minutes at room temperature.
  2. Heat a lightly greased 8-inch non-stick skillet or crepe pan over medium heat. Pour about 1/4 cup of batter into the pan, tilting quickly to coat the bottom evenly.
  3. Cook for 1-2 minutes until the edges are lightly browned and the crepe easily lifts. Flip the crepe and cook for another 30-60 seconds.
  4. Transfer the cooked crepe to a plate. Repeat with the remaining batter, stacking crepes as they are done.
  5. To assemble, lay a crepe flat. Place a slice of ham and a sprinkle of shredded Gruyere cheese on one half of the crepe.
  6. Fold the crepe in half, then in half again to form a triangle. You can also roll them up or fold into a square.
  7. Return the filled crepes to the warm skillet for 1-2 minutes per side, or until the cheese is melted and the crepes are warmed through.
  8. Serve immediately, garnished with fresh chives if desired.
