Ingredients

  • 1 tbsp olive oil
  • 1 leek
  • ¼ lb chorizo
  • 1 tsp turmeric
  • 1½ cup short-grain rice
  • 4 cup fish broth
  • ½ lb peas
  • 0.9 lb frozen seafood mix
  • 4 lemon wedges (optional)
  • 0 salt (optional)
  • 0 black pepper (optional)

Steps

  1. Heat olive oil in a deep frying pan over medium heat. Add sliced leek and soften for 5 minutes without browning.
  2. Stir in the sliced chorizo and cook until it releases its oils, about 3-5 minutes.
  3. Add turmeric and rice, stirring to coat the rice grains with the oils.
  4. Pour in the fish broth, bring to a boil, then reduce heat and simmer for 15 minutes, stirring occasionally.
  5. Add peas and cook for another 5 minutes.
  6. Stir in the frozen seafood mix and cook for 1-2 minutes, or until the seafood is heated through and the rice is tender.
  7. Check for seasoning and adjust with salt and pepper if needed.
  8. Serve immediately, garnished with lemon wedges if desired.
