Seafood Rice
A vibrant and comforting Spanish-style seafood rice dish, simmered with chorizo, leeks, and peas for a flavorful one-pan meal.
Ingredients
- 1 tbsp olive oil
- 1 leek
- ¼ lb chorizo
- 1 tsp turmeric
- 1½ cup short-grain rice
- 4 cup fish broth
- ½ lb peas
- 0.9 lb frozen seafood mix
- 4 lemon wedges (optional)
- 0 salt (optional)
- 0 black pepper (optional)
Steps
- Heat olive oil in a deep frying pan over medium heat. Add sliced leek and soften for 5 minutes without browning.
- Stir in the sliced chorizo and cook until it releases its oils, about 3-5 minutes.
- Add turmeric and rice, stirring to coat the rice grains with the oils.
- Pour in the fish broth, bring to a boil, then reduce heat and simmer for 15 minutes, stirring occasionally.
- Add peas and cook for another 5 minutes.
- Stir in the frozen seafood mix and cook for 1-2 minutes, or until the seafood is heated through and the rice is tender.
- Check for seasoning and adjust with salt and pepper if needed.
- Serve immediately, garnished with lemon wedges if desired.
