Sesame Cucumber Salad
A refreshing and crisp Chinese cucumber salad, lightly seasoned with sesame oil, rice vinegar, and a hint of chili.
Ingredients
- 2 medium cucumber
- ½ tsp salt
- 2 tsp sesame oil
- 2 tbsp rice vinegar
- ½ tsp red chili flakes (optional)
- 2 tsp sesame seeds (optional)
- 6 basil leaves (optional)
Steps
- Peel the cucumbers, then cut them lengthwise into quarters. If seeds are bitter, scrape them out and discard.
- Cut the cucumber quarters crosswise into 1/2-inch thick pieces.
- Place the cut cucumbers into a serving bowl and sprinkle with salt.
- Add sesame oil, rice vinegar, red chili flakes (if using), and basil leaves (if using) to the bowl.
- Toss all ingredients together until well combined.
- Garnish with toasted sesame seeds (if using) before serving.
