Sesame Cucumber Salad

A refreshing and crisp Chinese cucumber salad, lightly seasoned with sesame oil, rice vinegar, and a hint of chili.

Ingredients

  • 2 medium cucumber
  • ½ tsp salt
  • 2 tsp sesame oil
  • 2 tbsp rice vinegar
  • ½ tsp red chili flakes (optional)
  • 2 tsp sesame seeds (optional)
  • 6 basil leaves (optional)

Steps

  1. Peel the cucumbers, then cut them lengthwise into quarters. If seeds are bitter, scrape them out and discard.
  2. Cut the cucumber quarters crosswise into 1/2-inch thick pieces.
  3. Place the cut cucumbers into a serving bowl and sprinkle with salt.
  4. Add sesame oil, rice vinegar, red chili flakes (if using), and basil leaves (if using) to the bowl.
  5. Toss all ingredients together until well combined.
  6. Garnish with toasted sesame seeds (if using) before serving.
