Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 3 bell peppers
  • 1 red onion
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ¾ tsp salt
  • ½ tsp black pepper
  • 1 lime (optional)
  • ¼ cup fresh cilantro (optional)
  • 8 tortillas (optional)
  • ½ cup sour cream (optional)
  • ½ cup salsa (optional)

Steps

  1. Preheat oven to 4000F (2000C). Slice chicken breasts and bell peppers into thin strips, and the red onion into wedges.
  2. In a large bowl, combine olive oil, chili powder, cumin, paprika, garlic powder, salt, and black pepper.
  3. Add chicken, bell peppers, and red onion to the bowl and toss until evenly coated with the seasoning.
  4. Spread the seasoned chicken and vegetables in a single layer on a large sheet pan.
  5. Roast for 20-25 minutes, or until chicken is cooked through and vegetables are tender-crisp, flipping halfway through.
  6. Serve immediately with warm tortillas, a squeeze of fresh lime, and optional toppings like cilantro, sour cream, or salsa.
