Shrimp Burrito Bowl
A vibrant and flavorful burrito bowl featuring succulent shrimp, fresh veggies, and a zesty lime dressing.
Ingredients
- 1½ lb shrimp, peeled and deveined
- 1 cup brown rice
- 2 cup water
- 15 oz black beans, rinsed and drained
- 1½ cup corn kernels, frozen or canned
- ½ red onion, diced
- 2 avocado, diced
- 1 cup cherry tomatoes, halved
- 2 lime, juiced
- ¼ cup cilantro, chopped (optional)
- 2 tbsp olive oil
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup sour cream or Greek yogurt (optional)
Steps
- Cook brown rice according to package directions. While rice cooks, prepare other ingredients.
- In a large bowl, toss shrimp with 1 tablespoon olive oil, chili powder, cumin, garlic powder, salt, and pepper.
- Heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add seasoned shrimp and cook for 2-3 minutes per side, until pink and opaque. Remove from skillet.
- In a separate bowl, combine black beans, corn, diced red onion, halved cherry tomatoes, and half of the chopped cilantro (if using).
- Prepare the lime dressing by whisking together lime juice and 1 tablespoon of olive oil. Season with a pinch of salt and pepper.
- Assemble the bowls: Divide cooked rice among 4 bowls. Top with the bean and corn mixture, cooked shrimp, and diced avocado.
- Drizzle with lime dressing and garnish with remaining fresh cilantro and a dollop of sour cream or Greek yogurt, if desired.
