Ingredients

  • 1½ lb shrimp, peeled and deveined
  • 1 cup brown rice
  • 2 cup water
  • 15 oz black beans, rinsed and drained
  • 1½ cup corn kernels, frozen or canned
  • ½ red onion, diced
  • 2 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 2 lime, juiced
  • ¼ cup cilantro, chopped (optional)
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup sour cream or Greek yogurt (optional)

Steps

  1. Cook brown rice according to package directions. While rice cooks, prepare other ingredients.
  2. In a large bowl, toss shrimp with 1 tablespoon olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  3. Heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add seasoned shrimp and cook for 2-3 minutes per side, until pink and opaque. Remove from skillet.
  4. In a separate bowl, combine black beans, corn, diced red onion, halved cherry tomatoes, and half of the chopped cilantro (if using).
  5. Prepare the lime dressing by whisking together lime juice and 1 tablespoon of olive oil. Season with a pinch of salt and pepper.
  6. Assemble the bowls: Divide cooked rice among 4 bowls. Top with the bean and corn mixture, cooked shrimp, and diced avocado.
  7. Drizzle with lime dressing and garnish with remaining fresh cilantro and a dollop of sour cream or Greek yogurt, if desired.
