Shrimp Burritos

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 4 large flour tortillas
  • 2 cups cooked rice
  • 1 can canned black beans, rinsed and drained
  • ½ cup salsa
  • 1 cup shredded Monterey Jack cheese (optional)
  • 1 avocado, sliced (optional)
  • 1 lime
  • ¼ cup cilantro, chopped (optional)
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Pat shrimp dry and toss with chili powder, cumin, garlic powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and opaque. Squeeze fresh lime juice over the cooked shrimp.
  3. Warm tortillas according to package instructions (microwave, oven, or dry skillet).
  4. Assemble burritos: Lay out a warm tortilla. Spread a spoonful of rice, then add some black beans and shrimp down the center.
  5. Top with salsa, shredded cheese (if using), sliced avocado (if using), and chopped cilantro (if using).
  6. Fold in the sides of the tortilla, then tightly roll from the bottom up to form a burrito. Serve immediately.
