Shrimp Burritos
Flavorful shrimp seasoned and seared, then wrapped in warm tortillas with rice, beans, and your favorite burrito fillings for a satisfying meal.
Ingredients
- 1 lb shrimp, peeled and deveined
- 4 large flour tortillas
- 2 cups cooked rice
- 1 can canned black beans, rinsed and drained
- ½ cup salsa
- 1 cup shredded Monterey Jack cheese (optional)
- 1 avocado, sliced (optional)
- 1 lime
- ¼ cup cilantro, chopped (optional)
- 1 tbsp olive oil
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Pat shrimp dry and toss with chili powder, cumin, garlic powder, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and opaque. Squeeze fresh lime juice over the cooked shrimp.
- Warm tortillas according to package instructions (microwave, oven, or dry skillet).
- Assemble burritos: Lay out a warm tortilla. Spread a spoonful of rice, then add some black beans and shrimp down the center.
- Top with salsa, shredded cheese (if using), sliced avocado (if using), and chopped cilantro (if using).
- Fold in the sides of the tortilla, then tightly roll from the bottom up to form a burrito. Serve immediately.
