Shrimp Scampi
A classic Italian-American dish featuring succulent shrimp bathed in a garlic-butter white wine sauce, perfect with pasta.
Ingredients
- 1½ lb large shrimp, peeled and deveined
- 12 oz linguine or spaghetti
- ½ cup unsalted butter
- 2 tbsp olive oil
- 4 clove garlic, minced
- ½ cup dry white wine
- 2 tbsp lemon juice
- ½ tsp red pepper flakes (optional)
- ¼ cup fresh parsley, chopped (optional)
- 1 tsp salt
- ½ tsp black pepper
Steps
- Cook pasta according to package directions until al dente. Reserve 1 cup of pasta water, then drain.
- While pasta cooks, melt butter and olive oil in a large skillet over medium heat.
- Add garlic and red pepper flakes (if using) to the skillet and sauté for 1 minute until fragrant.
- Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque.
- Pour in white wine and lemon juice, bringing to a simmer. Cook for 1-2 minutes until slightly reduced.
- Add cooked pasta to the skillet with the shrimp sauce. Toss to combine, adding a splash of reserved pasta water if needed to create a glossy sauce.
- Season with salt and pepper to taste. Garnish with fresh parsley before serving.
