Shrimp Scampi

A classic Italian-American dish featuring succulent shrimp bathed in a garlic-butter white wine sauce, perfect with pasta.

Ingredients

  • 1½ lb large shrimp, peeled and deveined
  • 12 oz linguine or spaghetti
  • ½ cup unsalted butter
  • 2 tbsp olive oil
  • 4 clove garlic, minced
  • ½ cup dry white wine
  • 2 tbsp lemon juice
  • ½ tsp red pepper flakes (optional)
  • ¼ cup fresh parsley, chopped (optional)
  • 1 tsp salt
  • ½ tsp black pepper

Steps

  1. Cook pasta according to package directions until al dente. Reserve 1 cup of pasta water, then drain.
  2. While pasta cooks, melt butter and olive oil in a large skillet over medium heat.
  3. Add garlic and red pepper flakes (if using) to the skillet and sauté for 1 minute until fragrant.
  4. Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque.
  5. Pour in white wine and lemon juice, bringing to a simmer. Cook for 1-2 minutes until slightly reduced.
  6. Add cooked pasta to the skillet with the shrimp sauce. Toss to combine, adding a splash of reserved pasta water if needed to create a glossy sauce.
  7. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
