Shrimp Scampi Pasta

A classic Italian-American dish featuring succulent shrimp tossed with garlic, butter, white wine, and lemon, served over al dente pasta.

Ingredients

  • 12 oz linguine
  • 1½ lb large shrimp, peeled and deveined
  • ½ cup unsalted butter
  • 4 clove garlic, minced
  • ½ cup dry white wine (like Pinot Grigio)
  • 2 tbsp lemon juice
  • ¼ tsp red pepper flakes (optional)
  • ¼ cup fresh parsley, chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil

Steps

  1. Cook linguine according to package directions in salted water until al dente. Reserve 1 cup of pasta water before draining.
  2. While pasta cooks, pat shrimp dry. Season with salt and pepper.
  3. In a large skillet, melt butter with olive oil over medium heat. Add minced garlic and red pepper flakes (if using); cook for 1 minute until fragrant.
  4. Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
  5. Pour white wine and lemon juice into the skillet, scraping up any browned bits. Bring to a simmer and cook for 2 minutes.
  6. Return shrimp to the skillet. Add cooked linguine and half of the chopped parsley. Toss to combine, adding reserved pasta water as needed to create a light sauce.
  7. Serve immediately, garnished with remaining fresh parsley.
