Shrimp Scampi Pasta
A classic Italian-American dish featuring succulent shrimp tossed with garlic, butter, white wine, and lemon, served over al dente pasta.
Ingredients
- 12 oz linguine
- 1½ lb large shrimp, peeled and deveined
- ½ cup unsalted butter
- 4 clove garlic, minced
- ½ cup dry white wine (like Pinot Grigio)
- 2 tbsp lemon juice
- ¼ tsp red pepper flakes (optional)
- ¼ cup fresh parsley, chopped
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
Steps
- Cook linguine according to package directions in salted water until al dente. Reserve 1 cup of pasta water before draining.
- While pasta cooks, pat shrimp dry. Season with salt and pepper.
- In a large skillet, melt butter with olive oil over medium heat. Add minced garlic and red pepper flakes (if using); cook for 1 minute until fragrant.
- Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
- Pour white wine and lemon juice into the skillet, scraping up any browned bits. Bring to a simmer and cook for 2 minutes.
- Return shrimp to the skillet. Add cooked linguine and half of the chopped parsley. Toss to combine, adding reserved pasta water as needed to create a light sauce.
- Serve immediately, garnished with remaining fresh parsley.
