Shrimp Scampi Pizza
A delightful pizza topped with succulent shrimp, garlic, lemon, and herbs, bringing the classic scampi flavors to a crispy crust.
Ingredients
- 1 lb pizza dough
- 1 lb large shrimp, peeled and deveined
- 4 tbsp unsalted butter
- 4 clove garlic, minced
- 1 lemon, juiced and zested
- ¼ cup dry white wine (optional)
- ½ tsp red pepper flakes
- ¼ cup fresh parsley, chopped
- 1½ cup mozzarella cheese, shredded
- ½ cup Parmesan cheese, grated
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Preheat oven to 450°F (230°C). Lightly grease a pizza pan or baking sheet.
- In a large skillet, melt butter over medium heat. Add minced garlic and red pepper flakes; cook for 1 minute until fragrant. Add shrimp, lemon juice, salt, and pepper. Cook for 2-3 minutes until shrimp just turn pink. Remove shrimp from skillet and set aside. If using, deglaze the pan with white wine and reduce slightly, then remove from heat.
- Stretch or roll out pizza dough on the prepared pan. Brush the dough with olive oil and then spread the pan sauce (if used) or a little extra olive oil over the crust. Sprinkle with half of the mozzarella and Parmesan cheeses.
- Arrange the cooked shrimp evenly over the cheese. Top with the remaining mozzarella and Parmesan cheese.
- Bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly and lightly browned.
- Remove from oven, sprinkle with fresh parsley and lemon zest. Slice and serve immediately.
