Shrimp Scampi Salad
A refreshing salad featuring succulent shrimp tossed in a garlicky lemon-butter sauce, served over a bed of crisp greens.
Ingredients
- 1½ lb large shrimp, peeled and deveined
- 4 oz linguine or spaghetti (optional)
- 4 tbsp butter
- 2 tbsp olive oil
- 4 clove garlic, minced
- ½ cup dry white wine or chicken broth
- 1 lemon, juiced
- ½ tsp red pepper flakes (optional)
- ¼ cup fresh parsley, chopped
- 8 oz mixed greens
- 1 cup cherry tomatoes, halved
- ½ cucumber, sliced
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Pat the shrimp dry and season with salt and pepper.
- In a large skillet, melt butter and olive oil over medium heat. Add minced garlic and red pepper flakes (if using) and cook for 1 minute until fragrant.
- Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque. Do not overcrowd the pan; cook in batches if necessary.
- Pour in white wine or broth and lemon juice. Bring to a simmer and cook for 1-2 minutes, scraping up any browned bits from the bottom of the pan. Stir in fresh parsley.
- Divide mixed greens, cherry tomatoes, and cucumber among four plates. Top each salad with a portion of the cooked shrimp and a generous drizzle of the scampi sauce from the skillet.
