Shrimp Scampi Salad

A refreshing salad featuring succulent shrimp tossed in a garlicky lemon-butter sauce, served over a bed of crisp greens.

Ingredients

  • 1½ lb large shrimp, peeled and deveined
  • 4 oz linguine or spaghetti (optional)
  • 4 tbsp butter
  • 2 tbsp olive oil
  • 4 clove garlic, minced
  • ½ cup dry white wine or chicken broth
  • 1 lemon, juiced
  • ½ tsp red pepper flakes (optional)
  • ¼ cup fresh parsley, chopped
  • 8 oz mixed greens
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, sliced
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Pat the shrimp dry and season with salt and pepper.
  2. In a large skillet, melt butter and olive oil over medium heat. Add minced garlic and red pepper flakes (if using) and cook for 1 minute until fragrant.
  3. Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque. Do not overcrowd the pan; cook in batches if necessary.
  4. Pour in white wine or broth and lemon juice. Bring to a simmer and cook for 1-2 minutes, scraping up any browned bits from the bottom of the pan. Stir in fresh parsley.
  5. Divide mixed greens, cherry tomatoes, and cucumber among four plates. Top each salad with a portion of the cooked shrimp and a generous drizzle of the scampi sauce from the skillet.
