Shrimp Stir-fry with Teriyaki Sauce
A quick and flavorful shrimp stir-fry tossed in a savory teriyaki sauce with crisp vegetables, perfect for a weeknight meal.
Ingredients
- 1½ lb large shrimp, peeled and deveined
- 4 cup broccoli florets
- 2 cup carrots, julienned
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 3 clove garlic, minced
- 1 tbsp fresh ginger, grated
- ¾ cup teriyaki sauce
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 tbsp vegetable oil
- 4 cup cooked white rice (optional)
- 1 tsp sesame seeds (optional)
- 2 green onions, sliced (optional)
Steps
- Pat shrimp dry and set aside. Prepare all vegetables: chop broccoli, julienne carrots, slice bell pepper and onion, mince garlic, and grate ginger.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add broccoli, carrots, and bell pepper; stir-fry for 3-5 minutes until crisp-tender. Remove vegetables from the skillet and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the skillet. Add onion, garlic, and ginger; stir-fry for 1 minute until fragrant.
- Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque. Do not overcrowd the pan; cook in batches if necessary.
- Return the stir-fried vegetables to the skillet with the shrimp. Pour in teriyaki sauce and soy sauce, tossing to coat everything evenly.
- Drizzle with sesame oil and stir well. Serve immediately over cooked white rice, garnished with sesame seeds and green onions if desired.
