Ingredients

  • 1 lb shrimp, peeled and deveined
  • 8 corn tortillas
  • ½ head red cabbage
  • 2 lime
  • 1 avocado (optional)
  • ¼ cup cilantro (optional)
  • ½ cup mayonnaise
  • ½ tsp garlic powder
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil

Steps

  1. Thinly slice the red cabbage and set aside. In a small bowl, whisk together mayonnaise, juice from 1 lime, garlic powder, salt, and pepper for the lime crema. Set aside.
  2. In a medium bowl, toss shrimp with chili powder, cumin, paprika, salt, and pepper until evenly coated.
  3. Heat olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, or until pink and opaque.
  4. Warm tortillas according to package directions. You can microwave them, heat them in a dry skillet, or wrap in foil and bake.
  5. Assemble tacos: place a spoonful of cabbage on each tortilla, top with cooked shrimp, a drizzle of lime crema, and optional avocado and cilantro.
  6. Serve immediately with extra lime wedges.
