Shrimp With Snow Peas

Ingredients

  • 1 lb shrimp
  • ½ lb snow peas
  • 4 scallions
  • 3 clove garlic
  • 1 tbsp ginger
  • 2 tsp cornstarch
  • 1 tbsp dry sherry
  • ½ tsp kosher salt
  • 2 tbsp peanut oil
  • 2 tsp soy sauce
  • ¼ cup chicken broth
  • 2 tsp sesame oil

Steps

  1. In a bowl, combine cornstarch, dry sherry, and kosher salt. Add shrimp and toss to coat; marinate for 15-20 minutes.
  2. While shrimp marinates, prep snow peas, mince garlic, and grate ginger. Slice scallions.
  3. Heat a wok or large sauté pan over high heat for 1 minute. Add peanut oil and heat for 30 seconds.
  4. Add ginger and garlic to the hot oil; stir-fry for about 30 seconds until fragrant.
  5. Add the marinated shrimp (and any remaining marinade), snow peas, soy sauce, and chicken broth to the pan. Stir-fry for about 2 minutes, until shrimp turns pink.
  6. Add scallions and stir-fry for 1 more minute.
  7. Remove from heat, drizzle with sesame oil, and toss to combine.
  8. Serve immediately, ideally with steamed rice.
