Shrimp With Snow Peas
A quick and flavorful Chinese stir-fry featuring succulent shrimp and crisp snow peas, finished with aromatic sesame oil.
Ingredients
- 1 lb shrimp
- ½ lb snow peas
- 4 scallions
- 3 clove garlic
- 1 tbsp ginger
- 2 tsp cornstarch
- 1 tbsp dry sherry
- ½ tsp kosher salt
- 2 tbsp peanut oil
- 2 tsp soy sauce
- ¼ cup chicken broth
- 2 tsp sesame oil
Steps
- In a bowl, combine cornstarch, dry sherry, and kosher salt. Add shrimp and toss to coat; marinate for 15-20 minutes.
- While shrimp marinates, prep snow peas, mince garlic, and grate ginger. Slice scallions.
- Heat a wok or large sauté pan over high heat for 1 minute. Add peanut oil and heat for 30 seconds.
- Add ginger and garlic to the hot oil; stir-fry for about 30 seconds until fragrant.
- Add the marinated shrimp (and any remaining marinade), snow peas, soy sauce, and chicken broth to the pan. Stir-fry for about 2 minutes, until shrimp turns pink.
- Add scallions and stir-fry for 1 more minute.
- Remove from heat, drizzle with sesame oil, and toss to combine.
- Serve immediately, ideally with steamed rice.
